FLAVOR INSPIRATIONS FROM MEXICO
The Yucatán Peninsula represents the marriage of ancient Mayan cuisine and techniques with the ingredients and flavor profile of Spanish colonialism. From the iconic achiote color and flavor profile to the pit style form of cooking known as “pib,” Dole will explore the delicious and trend-forward concepts such as cool and refreshing fruit-forward paletas to the iconic steamed savory parcel, tamale.
