Potato Wedges with Spicy Dragon Fruit Aioli
Crispy, golden potato wedges served with a vibrant and flavorful dragon fruit aioli. Serve on the side of your favorite sandwich or as a shareable.
Ingredients
100 ea potato wedges
3 Tbsp seasoning salt
½ cup DOLE® Chef-Ready Cuts Diced Dragon Fruit, thawed with juice reserved
⅓ cup pickled jalapeño
1 cup mayo
1 tsp lime juice
1 tsp salt
1 tsp pepper
½ cup cilantro
½ cup parmesan
Directions
- Preheat fryer to 350 degrees.
- Cook potatoes according to package instructions. Seasoning with season salt.
- In a blender, add dragon fruit, jalapeño, mayo, lime juice, salt, and pepper and blend until smooth.
- Garnish with cilantro and parmesan.
