Eggplant Pide with Dragon Fruit Slaw

A savory flatbread topped with grilled eggplant, roasted red pepper spread (ajvar), a creamy Kajmak cheese and a fried egg. Served with a beautiful dragon fruit, citrus slaw.

Eggplant Pide with Dragon Fruit Slaw

Ingredients

Slaw

3 cups red cabbage, shredded

2 Tbsp salt

2 Tbsp pepper

1 cup apple cider vinegar

1 cup DOLE® 100% Pineapple Juice

1 cup DOLE Chef-Ready Cuts Diced Dragon Fruit

4 each jalapeño, seeded and small diced

Pide

1 each eggplant, sliced into 10 lengthwise planks

¼ cup olive oil

2 Tbsp Tajin

3 sprigs thyme, picked and chopped

10 eggs

salt and pepper, to taste

10 flatbread, wood-fired

10 Tbsp Ajvar (roasted red pepper spread)

½ cup Kajmak (fresh cheese, similar to clotted cream)

Directions

Slaw

  1. In a small bowl, add the slaw ingredients and toss to mix.

Pide

  1. Preheat grill to medium heat. Brush eggplant slices with olive oil and season generously with Tajin.
  2. Grill each side for 2 minutes. Remove and place in covered dish with half the thyme for 5 minutes.
  3. On a hot flattop grill, fry eggs to desired consistency, seasoning with salt and pepper.
  4. Heat flatbread on the grill. Top flatbread with a layer of eggplant and cooked eggs.
  5. Finish with a dollop of Kajmak and a drizzle of ajvar. Serve with a side of slaw.
