Dragon Fruit and Cherry Granita Siciliana with Brioche
A traditional Sicilian breakfast staple updated with dragon fruit and cherries.
Ingredients
Cherry Dragon Fruit Granita
½ cup sugar
½ cup hot water
3 cups DOLE® IQF Dark Sweet Cherries, reserve some for garnish
3 cups DOLE Chef-Ready Cuts Diced Dragon Fruit, reserve some for garnish
½ cup simple syrup
¼ cup orange juice
2 Tbsp lemon juice
4 cups shaved ice
For the Cream:
1 cup heavy cream
1 ea cinnamon stick
¼ tsp vanilla extract
1 sheet gelatin
10 ea Brioche rolls
Directions
Cherry Dragon Fruit Granita
- Combine sugar and hot water in bowl and stir until all the sugar is dissolved. Allow to cool for 10 minutes.
- In a blender combine cherries, dragon fruit, simple syrup, juices and shaved ice. Blend until smooth. Pour into bowls.
For the Cream:
- Heat cream over low heat with cinnamon stick and vanilla. Add Gelatin and stir until dissolved.
- Remove from heat and cool in fridge.
- Divide Granita into 10 cups or bowls. Top with dollop of cream and a warm brioche on the side for dipping.
