Cherry Dragon Fruit Granita
                            ½ cup sugar
                            ½ cup hot water
                            3 cups DOLE® IQF Dark Sweet Cherries, reserve some for garnish
                            3 cups DOLE Chef-Ready Cuts Diced Dragon Fruit, reserve some for garnish
                            ½ cup simple syrup
                            ¼ cup orange juice
                            2 Tbsp lemon juice, from Dole IQF Lemon Wedges
                            4 cups shaved ice
                          For the Cream:
                            1 cup heavy cream
                            1 ea cinnamon stick
                            ¼ tsp vanilla extract
                            1 sheet gelatin
                            10 ea Brioche rolls
