Dragon Fruit and Cherry Granita Siciliana with Brioche

Ingredients

Cherry Dragon Fruit Granita

½ cup sugar

½ cup hot water

3 cups DOLE® IQF Dark Sweet Cherries, reserve some for garnish

3 cups DOLE Chef-Ready Cuts Diced Dragon Fruit, reserve some for garnish

½ cup simple syrup

¼ cup orange juice

2 Tbsp lemon juice

4 cups shaved ice

For the Cream:

1 cup heavy cream

1 ea cinnamon stick

¼ tsp vanilla extract

1 sheet gelatin

10 ea Brioche rolls

Directions

Cherry Dragon Fruit Granita

  1. Combine sugar and hot water in bowl and stir until all the sugar is dissolved. Allow to cool for 10 minutes.
  2. In a blender combine cherries, dragon fruit, simple syrup, juices and shaved ice. Blend until smooth. Pour into bowls.

For the Cream:

  1. Heat cream over low heat with cinnamon stick and vanilla. Add Gelatin and stir until dissolved.
  2. Remove from heat and cool in fridge.
  3. Divide Granita into 10 cups or bowls. Top with dollop of cream and a warm brioche on the side for dipping.
