Dragon Fruit Avocado Smash Sprouted Grain Toast
A colorful brunch favorite topped with vibrant dragon fruit.
Ingredients
5 cups DOLE® Chef-Ready Cuts Diced Avocado, thawed, roughly mashed
2 Tbsp extra virgin olive oil
2 tsp kosher salt
1 cup DOLE Chef-Ready Cuts Diced Dragon Fruit, thawed
¼ cup jalapeño, deseeded and minced
3 Tbsp cilantro, minced
3 Tbsp shallots, minced
2 cups red wine vinegar
1 cup water
1 cup red onions, thinly sliced
slices of toast, as desired
½ Tbsp garlic, salt and pepper seasoning
½ tsp chili powder
Directions
- In a mixing bowl, combine the avocado, olive oil, salt, dragon fruit, jalapeño, cilantro and shallots. Stir gently.
- In a small sauce pot, over a medium to high heat, bring the vinegar and water to a boil. Add the onions and allow to simmer for 3 minutes then remove from heat and let sit for 10 minutes. Strain out the onions and set aside in the fridge to cool.
- Spread this mix evenly over each slice of toast.
- Sprinkle ½ Tbsp of garlic, salt and pepper seasoning over each slice of toast and ½ tsp of the chili powder.
- Garnish with pickled red onion.
