Caribbean Banana Coconut Chicken
Tender chicken flavored with coconut and banana.
Ingredients
1 teaspoon vegetable oil
1-½ pounds boneless skinless chicken breast
1 small onion chopped
1 medium red bell pepper chopped
1 medium green bell pepper chopped
2 teaspoons garlic cloves chopped
½ teaspoon ground cumin
1 can (13.5 oz.) coconut milk
½ teaspoon hot sauce
1 cup DOLE Chef-Ready Cuts Sliced Bananas
¼ cup fresh cilantro chopped
as needed hot cooked rice
Directions
- Preheat oven to 425°F. Spray 13x9-inch baking pan with cooking spray.
- Heat oil in skillet. Saute chicken breasts to brown on both sides.
- Remove chicken breasts and set aside. Add onion, bell peppers, garlic and cumin to skillet and saute until tender.
- Place chicken breasts, sautéed vegetables, coconut milk, hot sauce, banana slices, and cilantro in prepared baking pan. Stir to combine.
- Bake 30 min. or until chicken is no longer pink in center. Serve with rice.
