Warm Spinach Wrap with Chicken and Peaches
This is a great on-the-go wrap with spinach, chicken and peaches.
Ingredients
2 cut into strips boneless skinless chicken breast halves
3 Tbsp olive or vegetable oil
½ cup almonds sliced
1 cup red onion sliced
1-½ cups DOLE Chef-Ready Cuts Diced Peaches thawed
⅓ cup bottled balsamic vinaigrette
1 pkg. (6 oz.) Spinach
¼ cup DOLE Golden or Seedless Raisins
salt and ground black pepper to taste
4 (10-inch) flour tortillas burrito size warmed
Directions
- Stir-fry chicken in 2 tablespoons oil in large deep skillet or Dutch oven 4 to 5 minutes, or until chicken is no longer pink in center. Add almonds; cook 1 minute longer. Remove from skillet; set aside.
- Add remaining 1 tablespoon oil to skillet; cook onions, stirring, 2 minutes. Add peaches and cook 1 to 2 minutes longer or until onions are tender.
- Add balsamic vinaigrette to skillet; bring to boil. Reduce heat; add spinach, cooked chicken and raisins. Cover and cook 2 to 3 minutes or until spinach is just wilted. Stir well. Salt and pepper to taste.
- Prepare wraps by dividing chicken-spinach mixture evenly atop warmed tortillas. Fold in sides and roll up. Cut in half, if desired.
