Frybread with Dragon Fruit Pork Belly Sauce

Ingredients

2 lbs pork belly

1 Tbsp salt

1 Tbsp pepper

1 Tbsp paprika

2 tsp cayenne

2 garlic cloves, peeled

2 yellow onions, rough cut

4 stalks celery, rough cut

4 carrots, rough cut

3 cups DOLE® Chef-Ready Cuts Diced Dragon Fruit

5 ea dough balls (pizza bases)

½ bunch cilantro, chopped

10 DOLE Chef-Ready Cuts Citrus Lime Wedges

Directions

  1. Preheat oven to 275 degrees.
  2. Season pork belly with salt, pepper, paprika and cayenne. Place in roasting pan and add garlic, onions, celery and carrots. 
  3. Cook for 3 hours checking often. Then remove from pan and allow pork to cool.
  4. In a small sauce pan add dragon fruit, vegetable mixture and pan drippings. Heat until simmering.
  5. Remove from heat and place in blender. Pulse to make a chunky sauce.
  6. Roll dough to approximately 10 inches or as big as fryer will allow.
  7. Cook dough in 350 degree oil until brown and crisp. Turn over half way through.
  8. Remove from oil and drain on rack for 1 minute.
  9. Shred pork into small pieces and add to sauce. 
  10. Top frybread with dragon fruit sauce and garnish with lime wedges.

    NOTE: Serve with additional dipping sauces for an enticing appetizer.
