Frybread with Dragon Fruit Pork Belly Sauce
Perfectly crisp frybread with a pillowy soft inside, drizzled with a tantalizing dragon fruit pork belly sauce, offering a harmonious blend of savory and sweet flavors.
Ingredients
2 lbs pork belly
1 Tbsp salt
1 Tbsp pepper
1 Tbsp paprika
2 tsp cayenne
2 garlic cloves, peeled
2 yellow onions, rough cut
4 stalks celery, rough cut
4 carrots, rough cut
3 cups DOLE® Chef-Ready Cuts Diced Dragon Fruit
5 ea dough balls (pizza bases)
½ bunch cilantro, chopped
10 DOLE Chef-Ready Cuts Citrus Lime Wedges
Directions
- Preheat oven to 275 degrees.
- Season pork belly with salt, pepper, paprika and cayenne. Place in roasting pan and add garlic, onions, celery and carrots.
- Cook for 3 hours checking often. Then remove from pan and allow pork to cool.
- In a small sauce pan add dragon fruit, vegetable mixture and pan drippings. Heat until simmering.
- Remove from heat and place in blender. Pulse to make a chunky sauce.
- Roll dough to approximately 10 inches or as big as fryer will allow.
- Cook dough in 350 degree oil until brown and crisp. Turn over half way through.
- Remove from oil and drain on rack for 1 minute.
- Shred pork into small pieces and add to sauce.
- Top frybread with dragon fruit sauce and garnish with lime wedges.
NOTE: Serve with additional dipping sauces for an enticing appetizer.
