Smoked Turkey, Peach & Tomato Salad with Pineapple Tarragon Dressing
Smoked peaches, tomatoes and chicken breast with a tarragon and pineapple infused dressing give this salad a complex and crave-worthy flavor profile.
Ingredients
3 each roma tomatoes, diced
2 cups DOLE® Chef-Ready Cuts Diced Peaches
1 Tbsp tarragon
¼ cup white wine vinegar
¼ cup DOLE 100% Pineapple Juice
1 tsp salt
1 tsp pepper
½ cup olive oil
2 tsp sumac
½ cup mayo
5 cups Romaine lettuce
5 each smoked turkey breast, sliced into ½ inch pieces
½ cup green onions, sliced thin
Directions
- Place tomatoes and peaches in a bowl or pan.
- Use smoke gun with favorite chip to smoke the peaches and tomatoes. Make sure to cover tightly.
- In a blender, place tarragon, white wine vinegar, pineapple juice, salt and pepper and turn on low. Slowly add olive oil until combined and creamy.
- In a small bowl, add sumac and mayo and whisk to mix.
- Toss lettuce in the tarragon dressing and place on a platter or plate.
- Top lettuce with sliced turkey breast, tomatoes and peaches. Drizzle with sumac aioli and garnish with green onions.
