Grilled Halloumi w/ Minted Cherry Relish

A Cypriote-inspired relish of cherries, onion, cucumber, parsley, and mint served with grilled pita brushed with herb oil.

Grilled Halloumi w/ Minted Cherry Relish

Ingredients

Grilled Halloumi

½ cup olive oil

2 Tbsp salt

2 Tbsp pepper

¼ cup mint

¼ cup basil

1 lbs Halloumi cheese, cut into ½ in thick slices

Dark Cherry Relish

2 cups DOLE® IQF Dark Sweet Cherries, chopped

1 cup yellow onion, diced

1 cup European cucumber, diced

½ cup parsley

½ cup mint

2 Tbsp salt

2 Tbsp pepper

Pita

¼ cup olive oil

1 Tbsp garlic salt

2 Tbsp basil

2 Tbsp parsley

1 Tbsp pepper

5 ea Pita bread

Directions

Grilled Halloumi

  1. Combine olive oil, salt, pepper, mint and basil in small bowl and stir.
  2. In a large pan lay Halloumi flat and pour marinade over all cheese. Refrigerate and turn over after 30 minutes.
  3. Allow to marinate for 30 more minutes.
  4. Grill cheese on flat top grill or hot pan on each side for 2 minutes. Remove from grill and allow to cool for 3 minutes.
  5. Crumble Cheese and set aside.

Dark Cherry Relish

  1. In a medium bowl combine all ingredients for relish and stir gently. Add cheese and toss. Set aside for service.

Pita

  1. In a small bowl combine olive oil, garlic salt, basil, parsley and pepper.
  2. Brush one side of pita and place brushed side down on grill for 1 minute. Brush other side while cooking. Flip pita and grill for another minute.
  3. Cut into triangles and serve along with minted cherry relish.
