Mama V's Enchilada Bowl
A plant-forward blend of brown rice, black beans, and seasoned jackfruit in a green enchilada sauce.
Ingredients
olive or canola oil, as needed
1 #10 can DOLE Shredded Young Green Jackfruit, drained
⅔ cup taco seasoning or more to taste
2 ½ cups DOLE Chef-Ready Cuts Diced Avocado, frozen
1 (28 oz) can green enchilada sauce
2 Tbsp Montreal seasoning
3 (15 oz) cans black beans, drained and rinsed
10 cups brown rice, pre-cooked
Directions
- In a large skillet or pan, add oil, jackfruit and taco seasoning. Stir to evenly coat jackfruit and cook for 2-3 minutes.
- Add avocado, enchilada sauce, Montreal seasoning, and black beans. Stir to combine and cook until heated through, approximately 5 minutes.
- Remove from heat and hold hot for service.
- Scoop ½ cup brown rice into bowl and top with ½ cup jackfruit mixture.
