Jackfruit Quesadilla
Sautéed jackfruit topped with onions, peppers, and cheese melted together in a quesadilla.
Ingredients
¼ cup olive oil, plus more for brushing
1 cup red onion, chopped
4 green onions, chopped
4 medium red bell peppers, chopped
1 #10 can DOLE Shredded Young Green Jackfruit, drained
⅔ cup taco seasoning or more to taste
1 cup water
16 large flour tortillas
2 qts Mexican blend cheese, shredded
Directions
- Heat oil in large skillet over medium heat. Add red onion and cook until full softened, 3 minutes. Stir in green onion and bell pepper and cook for 1-2 more minutes.
- Stir in jackfruit, taco seasoning and water. Cook for 2-3 minutes, then take off heat.
- To assemble quesadillas, sprinkle one half of a tortilla with 2 Tbsp of cheese. Top with jackfruit mixture, then sprinkle with 2 more Tbsp of cheese. Fold over and lightly brush outside with olive oil.
- Heat a griddle or large non stick skillet just over medium heat. Cook each quesadilla around 3 minutes per side, until browned on the outside and melty on the inside.
- Cut quesadillas in half to serve.
