Jackfruit Gyro with Avocado Tzatziki Sauce
A plant-based take on a traditional gyro filled with Mediterranean-seasoned jackfruit, creamy avocado tzatziki and crisp veggies.
Ingredients
Jackfruit Gyro
½ cup vegetable oil
1 #10 can DOLE Shredded Young Green Jackfruit
½ cup Mediterranean seasoning
12 ea pita bread
Avocado Tzatziki Sauce
2 ea cucumbers, skinned, shredded and squeezed of excess liquid
⅔ cup dill, chopped
3 cups DOLE Chef-Ready Cuts Diced Avocado, thawed
3 Tbsp salt, divided
3 Tbsp pepper, divided
2 cups yogurt, plain
6 Tbsp lemon juice
⅔ cup olive oil
Vegetable Mixture
2 ½ cups red onions, finely diced
2 ½ cups tomatoes, chopped
6 Tbsp apple cider vinegar
2 Tbsp salt
2 Tbsp pepper
Directions
Jackfruit
- In a sauté pan over medium heat, add vegetable oil and heat for 1 minute. Add jackfruit and Mediterranean seasoning and cook for 3 minutes. Keep warm for service.
Avocado Tzatziki
- In a separate bowl, add cucumber, dill, avocado, 3 Tbsp salt, 3 Tbsp pepper, yogurt, lemon juice and olive oil. Blend with wand mixer or in blender until smooth.
Vegetable Mixture
- In a bowl, add onions, tomato, vinegar, remaining salt and pepper and allow to sit for 5 minutes.
To Serve
- Warm pita on flattop.
- Place jackfruit on half, add tzatziki sauce and garnish with tomato onion mixture.
