BBQ Jackfruit Sandwich Sliders
Tender jackfruit pieces cooked in a smoky bbq sauce smothered with coleslaw on a warm bun.
Ingredients
2 Tbsp olive oil
1 #10 can DOLE Shredded Young Green Jackfruit, drained
½ cup BBQ spice blend
2 cups BBQ sauce
1 lb shredded coleslaw mix
2 cups peri-peri mayonnaise, divided
½ cup DOLE Sweet & Sour Mix
10 ea brioche burger buns or 40 ea slider buns
Directions
- Heat a saucepan to medium-high heat. Add the olive oil, jackfruit and spice blend. Toss well to coat and cook until jackfruit begins to brown and is heated through.
- Add the BBQ sauce to the pan and toss well to coat and heat through. Remove from heat and hold hot for service.
- In a large mixing bowl, blend the coleslaw mix, half the peri-peri mayonnaise and the Sweet & Sour Mix.
- Toast the buns and then dress each with a drizzle of the remaining peri-peri mayonnaise, garnish with 4 pickle slices (on the large buns), or 1 slice on each slider.
- Top with the coleslaw mix and jackfruit. Serve while hot.
