Nammoura Semolina Cake with Apples

Ingredients

For the Apples:

3 cups DOLE® IQF Sliced Apples

3 Tbsp sugar

2 tsp cinnamon, ground

¼ tsp cardamom, ground

For the Cake:

1 cup yogurt

½ cup milk

2 ea eggs

1 Tbsp honey

1 + ¾ cup sugar, divided

2 cups semolina flour

1 cup cake flour

2 tsp baking powder

1 Tbsp Tahini

For the Syrup:

½ cup sugar

DOLE Pineapple Coconut Mix

2 ea cardamom pods

1 ea cinnamon stick

2 Tbsp orange blossom water

Directions

For the Apples:

  1. Preheat oven to 350 degrees. Place apples flat on baking sheet and sprinkle with mixture of sugar, cinnamon and cardamom. Bake for 20 minutes until browned and soft. Remove from pan and cool.

For the Cake:

  1. In a mixing bowl combine yogurt, milk, eggs and honey until incorporated.
  2. In a separate bowl combine sugar, semolina and cake flour with baking powder.
  3. Add dry ingredients into wet stirring constantly.
  4. Brush cake pan with tahini. Pour cake batter into pan and bake for 40 minutes or until completely baked.

For the Syrup:

  1. While cake is baking, in a small sauce pan over medium heat add pineapple coconut juice mix and sugar. Bring to a boil and add cardamom and cinnamon and allow to simmer for 5 minutes. Remove from heat and stir in orange blossom water.
  2. Once cake is done baking, remove from oven and pour syrup over cake while hot.
  3. Place apples on top of cake in a spiral pattern and allow to cool completely. Cut and serve.
