Lamb Suya with Tart Cherry Harissa
A delicious combination of savory and sweet with tender skewered lamb served with a fruity, tart cherry Harissa.
Ingredients
Lamb Skewers
20 ea wooden skewers
3 lbs lamb chops, cut into 1-inch chunks
¼ cup suya seasoning
1 cup DOLE® IQF Dark Sweet Cherries, thawed
Cherry Harissa
2 Tbsp lemon juice
1 cup harissa paste
1 cup DOLE® IQF Red Tart Cherries, thawed
Garnishes
1 cup mint leaves, separated, half rough chopped
20 ea lemon wedges
Directions
Lamb Skewers
- Soak skewers in water for 10 minutes.
- Season lamb with suya seasoning generously.
- Skewer lamb pieces on through center, using 5 pieces per skewer. Place a dark sweet cherry in between each piece of meat.
- Cook over 400-degree grill for 5 minutes per side or until medium doneness.
- Remove and allow to rest for 5 minutes.
Cherry Harissa
- In a blender, combine lemon juice, harissa paste, and red tart cherries and pulse until cherries are diced and ingredients are well mixed.
To Serve
- Pour combined ingredients in service bowl and arrange skewers on platter. Garnish with mint and lemon wedges.
