A delicious combination of savory and sweet with tender skewered lamb served with a fruity, tart cherry Harissa.

Lamb Suya with Tart Cherry Harissa

Ingredients

Lamb Skewers

20 ea wooden skewers

3 lbs lamb chops, cut into 1-inch chunks

¼ cup suya seasoning

1 cup DOLE® IQF Dark Sweet Cherries, thawed

Cherry Harissa

2 Tbsp lemon juice

1 cup harissa paste

1 cup DOLE® IQF Red Tart Cherries, thawed

Garnishes

1 cup mint leaves, separated, half rough chopped

20 ea lemon wedges

Directions

Lamb Skewers

  1. Soak skewers in water for 10 minutes.
  2. Season lamb with suya seasoning generously.
  3. Skewer lamb pieces on through center, using 5 pieces per skewer. Place a dark sweet cherry in between each piece of meat.
  4. Cook over 400-degree grill for 5 minutes per side or until medium doneness.
  5. Remove and allow to rest for 5 minutes.

Cherry Harissa

  1. In a blender, combine lemon juice, harissa paste, and red tart cherries and pulse until cherries are diced and ingredients are well mixed.

To Serve

  1. Pour combined ingredients in service bowl and arrange skewers on platter. Garnish with mint and lemon wedges.
