Efo Riro Spinach Stew with Jackfruit
A traditional Yoruba dish made with jackfruit for a meatless alternative.
Ingredients
5 cups DOLE® Shredded Young Green Jackfruit
3 cups spinach, blanched and drained
3 oz mackerel (hake fish), smoked
3 cups mushrooms, sliced
2 cups roma tomatoes, diced
1 cup onions, diced
1 Tbsp fish sauce
2 cups vegetable stock
3 Tbsp cumin
3 Tbsp turmeric
1 Tbsp salt
3 Tbsp black pepper
Directions
- Place all ingredients in a medium pot and heat over medium heat until boiling. Stir and reduce heat to low.
- Simmer for at least 45 minutes.
- Serve in a bowl with bread on side.
