Southwestern Jackfruit and Red Bean Bowl
The perfect meat replacement with a southwestern flavor twist.
Ingredients
2½ oz DOLE® Shredded Young Green Jackfruit, drained
2 Tbsp Tajin seasoning
½ cup water, divided
4 oz red beans, canned
2 Tbsp yellow onion, diced
1 tsp cayenne pepper
1 Tbsp salt
1 tsp pepper
4 oz yellow rice, cooked
2 Tbsp + 1 tsp cilantro, divided
1 tsp sour cream
Directions
- Preheat oven to 350°F.
- In a small oven-safe pan, add the jackfruit, tajin and half of the water and combine well. Place in the oven for 15 minutes or until heated through. Remove and keep warm for service.
- In a small pot over low heat, add beans, onions, cayenne, salt, pepper and remaining water and cook for 15 minutes. Keep warm for service.
- Prepare yellow rice according to package instructions, and finish by folding cilantro into rice. Keep warm for service.
- TO SERVE: Place rice into bowl, add cooked jackfruit in middle and garnish with additional cilantro and sour cream on top.
