Dragon Fruit Bubble Waffle Sundae
Bubble waffles are a favorite on the streets of Hong Kong. We've transformed this trendy treat into a show-stopping dessert, topped with creamy vanilla ice cream and a vibrant dragon fruit and strawberry jam.
Ingredients
1 qt flour
½ cup matcha powder
2 Tbsp baking powder
2 Tbsp cornstarch
½ tsp kosher salt
5 ea eggs
2 cups DOLE® Pineapple Coconut Mix
1 ¼ cup milk
2 Tbsp vanilla extract
10 Tbsp butter, unsalted and melted
1 bubble waffle iron
cooking spray, as needed
1 cup DOLE Chef-Ready Cuts Diced Dragon fruit, thawed. Plus additional for garnish.
3 cups DOLE Chef-Ready Cuts Diced Strawberries, thawed. Plus additional for garnish.

Directions
- In a bowl combine the flour, matcha, baking powder, cornstarch, and salt. Whisk to combine. Add egg, 1 ½ cups of pineapple coconut mix, milk, and vanilla. Gradually whisk the ingredients together until well combined, then whisk in the melted butter.
- Pre-heat a bubble waffle iron and lightly spray both sides. Add ¾ cup of waffle batter filling in all the bubbles. Flip the waffle maker over and cook for 2-4 minutes. Flip the waffle maker again and cook for 2-4 minutes. Remove with Fork and let rest 1 minute to allow the bubble waffle to crisp.
- While waffles are cooking, mix the dragon fruit, strawberries and remaining ½ cup of pineapple coconut mix in a small sauce pot and heat on medium to low heat to simmer and reduce for roughly 15-20 minutes. The jam should thicken, puree till smooth in a blender and reserve.
- To serve, roll the waffle into a cone shape and scoop 1 or 2 vanilla ice cream scoops into the center and drizzle generously with the jam.
