Ingredients

Chicken Fried Jackfruit:

8 oz DOLE® Shredded Young Green Jackfruit

1 cup almond milk

1 cup flour

½ cup canola oil

2 Tbsp cornstarch

1 tsp Cajun seasoning

½ tsp smoked paprika

½ tsp chili powder

½ tsp onion powder

½ tsp garlic powder

½ tsp black pepper

1 tsp sea salt

honey, as desired

Vegan Waffle Batter:

1½ cups almond milk

½ tsp vanilla extract

2 tsp apple cider vinegar

2 cups flour

1 Tbsp baking powder

½ tsp sea salt

1 Tbsp brown sugar

¼ cup coconut oil, melted

Directions

  1. Pat dry jackfruit, form into chunks, and place in bowl of almond milk. Place flour, canola oil, cornstarch, Cajun seasoning, smoked paprika, chili powder, onion powder, garlic powder, black pepper, and salt in large plastic sealed bag.
  2. Heat canola oil in pan. Dust jackfruit chunks in seasoned flour mix and fry in pan until golden brown. Set aside.

Vegan Waffle Mix:

  1. Mix almond milk, vanilla extract, and apple cider vinegar together and let sit.
  2. In large bowl, sift flour, baking powder and salt.
  3. Add brown sugar, melted coconut oil and almond milk mixture into the flour mixture and gently mix until combined.
  4. Heat waffle maker and spray with canola oil. Add ½ cup of the vegan waffle batter and cook until light brown.
  5. Place fried jackfruit chunks on top of waffle and drizzle with honey.
