Jackfruit Green Curry

A coconut green curry infused with lemongrass and filled with savory pieces of jackfruit.

Ingredients

2 Tbsp cooking oil

2 Tbsp garlic, minced

2 Tbsp ginger, minced

1 (3-inch) stalk lemongrass, minced

1 red Thai chili, finely diced

½ cup green curry paste

1 cup carrots, shredded

½ cup vegetable stock

1 cup DOLE® Pineapple Coconut Mix

1 (13.5 oz) can whole fat coconut milk

4 cups DOLE Shredded Young Green Jackfruit, drained

1 tsp salt & pepper

2 Tbsp soy sauce

3 Tbsp fresh basil

juice of 1 lime, plus extra lime wedge for garnish

Directions

  1. In a medium pan, add 2 Tbsp oil and sauté garlic, ginger, and lemongrass for 2 minutes.
  2. Add chili pepper and curry paste. Sauté 1 minute.
  3. Add carrots and sauté 2 min.
  4. Add stock, pineapple coconut mix, and coconut milk. Let simmer 20 minutes.
  5. Add jackfruit and simmer another 15 minutes.
  6. Last add salt and pepper, soy sauce, basil, and lime juice. Cook on low 10 minutes. Serve with lime wedge.
