Jackfruit Green Curry
A coconut green curry infused with lemongrass and filled with savory pieces of jackfruit.
Ingredients
2 Tbsp cooking oil
2 Tbsp garlic, minced
2 Tbsp ginger, minced
1 (3-inch) stalk lemongrass, minced
1 red Thai chili, finely diced
½ cup green curry paste
1 cup carrots, shredded
½ cup vegetable stock
1 cup DOLE® Pineapple Coconut Mix
1 (13.5 oz) can whole fat coconut milk
4 cups DOLE Shredded Young Green Jackfruit, drained
1 tsp salt & pepper
2 Tbsp soy sauce
3 Tbsp fresh basil
juice of 1 lime, plus extra lime wedge for garnish
Directions
- In a medium pan, add 2 Tbsp oil and sauté garlic, ginger, and lemongrass for 2 minutes.
- Add chili pepper and curry paste. Sauté 1 minute.
- Add carrots and sauté 2 min.
- Add stock, pineapple coconut mix, and coconut milk. Let simmer 20 minutes.
- Add jackfruit and simmer another 15 minutes.
- Last add salt and pepper, soy sauce, basil, and lime juice. Cook on low 10 minutes. Serve with lime wedge.
