Sweet & Sour Jackfruit Spring Rolls
A light and crunchy appetizer stuffed with a sweet & sour jackfruit filling.
Ingredients
2 Tbsp canola oil
4 cups DOLE® Shredded Young Green Jackfruit, drained and chopped
2 cups sweet & sour sauce
1 head napa cabbage, washed & separated (16 pieces)
2 cups steamed rice
2 cups cucumbers, julienned
2 cups carrots, julienned
8 oz bean sprouts
¾ cup scallions, roughly chopped
¼ cup cilantro, roughly chopped
pickled ginger, to taste
sesame seeds, garnish
Directions
- Add oil, jackfruit, and sweet & sour sauce to pan over medium heat. Sauté for 3-4 minutes.
- Overlap two pieces of cabbage and top with ¼ cup rice, ½ cup jackfruit, 4-5 pieces of cucumber, 4-5 pieces of carrot and 1 oz bean sprouts.
- Add scallions, cilantro, and pickled ginger to taste.
- Fold over the back end of the cabbage, followed by the left and right sides. Then roll into a cylinder. Slice the roll on a bias and garnish with sesame seeds.
