Jackfruit Salad Sandwich
A simple and delicious meat-less alternative for an easy to make lunch. Created by Chef John Davis.
Ingredients
2 cups DOLE Shredded Young Green Jackfruit
1 cup heavy duty mayonnaise (eggless for vegan)
½ cup of red grapes, halved
¼ cup honey roasted walnuts, chopped
2 tsp seasoning salt
2 tsp black pepper
2 slices multigrain bread
1 cup shredded lettuce
Directions
- Mix jackfruit, mayo, red grapes, chopped roasted walnuts, seasoning salt and pepper.
- Let salad sit for 1 hour.
- On a piece of bread, place shredded lettuce and top with jackfruit salad.
- Cover with another slice of bread and cut in half to serve.
