
Ingredients
2 cups sliced plantains
½ cup red onion, sliced
1 cup water
1 Tbsp salt
1 tsp red pepper flakes
1 tsp garlic powder
1 each bay leaf
½ cup apple cider vinegar
1 tsp pepper
2 cups DOLE Chef-Ready Cuts Diced Avocado, partially thawed
1 Tbsp cilantro, chopped
Directions
- In a sauce pot, add plantains, red onion, salt, garlic powder, pepper flakes, bay leaf, vinegar and pepper. Bring to a boil.
- Reduce heat and allow to simmer until plantains are soft.
- Remove from pan and add water and avocado. Cover tightly and place in fridge for 2 hours.
- Drain excess liquid and add cilantro. Mix gently and serve or keep refrigerated until service.
