Pineapple Sour Barley Water

Barley Water has been around for centuries and has been used as a healing refreshment. This beverage gets a flavor boost with DOLE Pineapple Sour Mix and pineapple chunks, for garnish.

Pineapple Sour Barley Water

1 cup Barley

1 quart Water

2 tablespoons Lemon Zest

2 tablespoons Lime Juice

1 ¼ cup DOLE Sweet & Sour Mix

1 tablespoon Honey

DOLE IQF Pineapple Chunks, thawed, for garnish

Lemon Wheels, for garnish


  1. Rinse barley thoroughly, then add it to a small pot with the water and lemon zest. Bring mixture to a boil, then reduce heat and simmer for 10 minutes.
  2. Drain the mixture and reserve the liquid in an appropriately sized container or carafe.
  3. To the barley liquid add the lime juice, pineapple sour, and honey.
  4. Chill and serve garnished with lemon wheel and a chunk of pineapple.
