Dragon’s Tail

Ingredients

2 cups water

4 cinnamon sticks

1 ½ cups sugar

1 cup DOLE IQF Dragon Fruit

1 ½ oz tequila reposado

½ oz mezcal espadin

½ oz aperol or campari

1 oz cinnamon simply syrup

1 oz Dragon Fruit Cinnamon Puree

¾ oz lime juice

Ice as needed

Directions

  1. In a small sauce pot, add water and cinnamon sticks and bring to a boil. Simmer for 10 minutes and strain out cinnamon sticks.
  2. Bring water back to a boil, add sugar and stir until sugar is dissolved. Set aside to cool.
  3. Combine cinnamon syrup and dragon fruit in a blender and blend until smooth.
  4. Add 1 oz dragon fruit mixture along with the remaining ingredients in a cocktail shaker with ice. NOTE: Additional dragon fruit puree can be refrigerated in an air tight container for up to 3 days.
  5. Shake and strain into a chilled rocks glass over ice.
  6. Garnish with a tropical element such as a banana leaf or slice of dragon fruit.
