Dole Blackberry Cobbler with Blackberry Creme Fraiche
(2018 Pairings) A delicious cobbler filled with blackberries and topped with blackberry creme.
Ingredients
¼ cup butter
1 cup whole milk
1 cup self-rising flour
1-½ cups plus 2 tablespoons sugar divided
3 cups frozen DOLE Blackberries divided, thawed, reserve juice
½ cup crme fraiche
Directions
- Combine butter and milk in a small saucepot and gently stir over medium heat until butter is melted. Remove from heat and transfer mixture to a medium-sized mixing bowl.
- Preheat oven to 350°F. Gradually whisk in self-rising flour and 1-1/4 cups sugar until smooth and homogenous.
- Carefully pour 1/2 cup of batter into individual ramekins and top each with 1/4 cup of thawed blackberries.
- Dust ramekins with 1/2 tablespoon sugar each and place in oven. Bake until golden brown and cooked throughout (approximately 25 minutes).
- Whisk together creme fraiche, reserved blackberry juice, and ¼ cup sugar in a small mixing bowl until fully incorporated. Reserve covered and refrigerated until needed.
- Place a 2 oz. dollop of blackberry crème fraiche on each warm blackberry cobbler and garnish with ¼ cup of thawed Dole® IQF Blackberries. Serve immediately.
