Banana Upside Down Cake
A banana flavored upside down cake.
Ingredients
3 Tbsp butter or margarine
½ cup packed brown sugar
3 cups DOLE Chef-Ready Cuts Sliced Bananas
1 eggs
½ cup granulated sugar
3 Tbsp vegetable oil
2 Tbsp milk
1 tsp vanilla extract
½ tsp grated orange peel
1 cup all-purpose flour
1 tsp baking powder
¾ tsp ground allspice
¼ tsp baking soda
1/8 tsp salt
Directions
- Preheat oven to 350°F.
- Melt butter in 9-inch cake pan. Stir in brown sugar.
- Arrange 2 cups banana slices in single layer in brown sugar. Place remaining 1 cup banana slices in blender or food processor with egg, granulated sugar, oil, milk, vanilla extract and orange peel. Cover; blend until smooth.
- Combine dry ingredients in large bowl. Add liquid mixture to dry mixture. Stir until blended. Pour batter over bananas in cake pan.
- Bake 30 minutes or until tooth pick inserted in center comes out clean. Remove from oven. Invert onto serving plate. Serve warm or room temperature. Garnish with whipped topping and a banana slice, if desired.
