Jerk Tilapia with Caribbean Mango Sauce
This flavor profile combines mango with rum to make a flavorful Caribbean dish.
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon hot pepper sauce
¾ cup DOLE Pineapple Juice
1 cup DOLE Chef-Ready Cuts Mango Cubes partially thawed
⅓ cup black spiced rum
½ cup packed brown sugar
⅓ cup chicken broth or stock
1 pound tilapia fillets
2 teaspoons jerk seasoning
- Combine onion powder, garlic powder, hot pepper sauce, pineapple juice, mango, rum, brown sugar, and chicken stock in a medium saucepan. Bring the mixture to a boil. Reduce heat; simmer 20 minutes or until sauce is reduced by half.
- Spray tilapia filets with cooking spray. Rub with jerk seasoning.
- Pan fry tilapia until fish is opaque and flakes easily, about 4 minutes on each side. Serve fish with sauce.
