Baked Feta with Blackberry and Rosemary Compote

A delicious blackberry compote served over baked cheese with crackers. Makes for a great snack.

Baked Feta with Blackberry and Rosemary Compote

Ingredients

as needed olive oil

3 black peppercorns

4 juniper berries

2 sprigs fresh rosemary

2 tbsp. sugar

1-½ tbsp. honey

2 cups DOLE Frozen Blackberries partially thawed

8 oz. block Feta cheese

Directions

  1. Preheat oven to 400 F. Brush small baking dish with olive oil to coat.
  2. Place peppercorns, juniper berries, and rosemary in small square of cheese cloth. Tie up ends of cloth with butcher's twine to create a pouch.
  3. In a medium saucepan place pouch along with sugar, honey and blackberries.  Heat to simmer over medium heat. Make sure pouch is tucked under blackberries in pan. Reduce heat, simmer 25 minutes or until blackberries break apart and juices thicken; stir occasionally. Remove pouch, squeeze out juice from cheese cloth and discard. Set sauce aside.
  4. Arrange cheese in prepared baking dish. Place dish in upper third of oven; bake 8 to 10 minutes or until feta softens. Turn oven broiler on and continue to cook 3 to 6 minutes or until top browns.
  5. Spoon warm blackberry compote over feta and serve immediately with crackers.
