Tiropita with Mango and Gouda Cheese

Egg Filling

5 ea eggs

½ cup heavy cream

1 Tbsp parsley

1 Tbsp chives

2 Tbsp salt

2 Tbsp pepper

Mango Filling

1 cup DOLE® Chef-Ready Cuts Mango Cubes

¼ cup maple syrup

1 tsp salt

3 ea egg yolk

2 Tbsp water


5 ea Phyllo dough sheets

1 cup gouda cheese, shredded

1 cup Farmer cheese, crumbled


Egg Filling

  1. In a bowl add eggs, cream, parsley, chives, 2 Tbsp salt and 2 Tbsp pepper.
  2. Cook in frying pan stirring often over medium heat until thoroughly cooked. Remove from pan to cool.

Mango Filling

  1. In a separate pan add mangos, syrup and 1 tsp salt and cook for 15 minutes over medium heat stirring frequently. Remove from pan to cool.
  2. Mix egg yolk and water in small bowl to make egg wash.


  1. Place equal amounts of egg and mango mixture onto center of all 10 pieces of dough with gouda and farmers cheese. Fold to form triangles.
  2. Wash seam and top each with egg wash.
  3. Bake in 350-degree oven for 15 minutes or until golden brown and cooked through.
  4. Serve warm.
