Chicken Suya Sandwich with Mango Chermoula Sauce

A fruity North African style Chermoula sauce made with mangos, chiles, aromatics, and spices, sandwiched on a crusty baguette.

Chicken Suya Sandwich with Mango Chermoula Sauce

For the Sauce:

1 oz lemon juice

½ bunch parsley, pulled from stem

½ bunch cilantro, pulled from stem

2 Tbsp garlic, minced

2 ea Red Bird Chilis, seedless & chopped

1 Tbsp smoked paprika

1 Tbsp cumin, ground

3 Tbsp black pepper

1 Tbsp lemon zest

3 cups DOLE® Chef-Ready Mango Cubes, reserve some for garnish

For the Sandwich:

3 lbs chicken breast, sliced into 1-inch strips

2 oz suya seasoning

10 ea baguettes, 10-inch

2 lb lettuce, shredded

3 ea tomatoes, sliced thin

2 ea onions, sliced thin


For the Sauce:

  1. Place all ingredients for sauce in a blender and pulse until combined completely. Set in fridge for service.

For the Sandwich:

  1. Toast baguettes until warmed through.
  2. Season chicken strips with suya seasoning.
  3. Cook on 400 degree grill for 3 minutes per side. Cook longer if needed.
  4. Top open baguettes with chicken, lettuce, tomato and onions. Drizzle with sauce and cut in half to serve. Serve with additional sauce on the side.
