Chicken Suya Sandwich with Mango Chermoula Sauce
A fruity North African style Chermoula sauce made with mangos, chiles, aromatics, and spices, sandwiched on a crusty baguette.
Ingredients
For the Sauce:
1 oz lemon juice
½ bunch parsley, pulled from stem
½ bunch cilantro, pulled from stem
2 Tbsp garlic, minced
2 ea Red Bird Chilis, seedless & chopped
1 Tbsp smoked paprika
1 Tbsp cumin, ground
3 Tbsp black pepper
1 Tbsp lemon zest
3 cups DOLE® Chef-Ready Mango Cubes, reserve some for garnish
For the Sandwich:
3 lbs chicken breast, sliced into 1-inch strips
2 oz suya seasoning
10 ea baguettes, 10-inch
2 lb lettuce, shredded
3 ea tomatoes, sliced thin
2 ea onions, sliced thin
Directions
For the Sauce:
- Place all ingredients for sauce in a blender and pulse until combined completely. Set in fridge for service.
For the Sandwich:
- Toast baguettes until warmed through.
- Season chicken strips with suya seasoning.
- Cook on 400 degree grill for 3 minutes per side. Cook longer if needed.
- Top open baguettes with chicken, lettuce, tomato and onions. Drizzle with sauce and cut in half to serve. Serve with additional sauce on the side.
