Jackfruit and Bean Chimichanga Nachos

Ingredients

6 oz DOLE® Shredded Young Green Jackfruit, drained

1 Tbsp taco seasoning

4 oz black refried beans, heated

2 oz shredded cheddar

2 oz sour cream

2 oz DOLE Chef-Ready Cuts Diced Avocados

2 Tbsp black olives, sliced

2 Tbsp cilantro, chopped

Tortilla chips

Directions

  1. In a small pan over medium heat, cook jackfruit until browned and crispy on edges.
  2. Add taco seasoning and water. Cook for additional 10 minutes.
  3. TO SERVE: Place a few tortillas on bottom of bowls. Add refried beans to center, place jackfruit around edges. Add cheddar, sour cream, avocado, black olives and garnish with fresh cilantro. Place more tortilla shells around edge of bowl standing up.
