Strawberry & Peach Hong Kong French Toast

A fruity upgrade on a classic french toast featuring layers of succulent strawberry jam and peanut butter, topped with a spiced peach maple syrup.

Strawberry & Peach Hong Kong French Toast

Ingredients

2 cups DOLE® Chef-Ready Cuts Diced Strawberries

½ cup & 1 tsp DOLE Sweet and Sour Juice Blend

2 Tbsp pectin

30 ea white bread, sliced

10 Tbsp peanut butter, chunky

10 ea eggs, beaten

vegetable oil, as needed

1 cup maple syrup

2 cups DOLE Chef Ready-Cuts Diced Peaches, thawed

2 Tbsp butter, unsalted

½ tsp nutmeg, ground

¼ tsp cinnamon, ground

Directions

  1. In a small sauce pot, combine the strawberries and ½ cup of sweet and sour mix. Simmer over a medium heat from 10 minutes, add the pectin then roughly macerate with either a wooden spoon, or blend till smooth in a blender. Let the jam cool in a fridge and thicken.
  2. With three pieces of bread, spread a thin layer of peanut butter on one and strawberry jam on another. Sandwich them together with the peanut butter facing up, then the strawberry slice on top facing upwards, then topped with the remaining slice. Repeat this process for the other sandwiches.
  3. Slice off the crusts to form a uniform square.
  4. Dip each sandwich into the eggs to lightly coat all over.
  5. In a heavy bottomed skillet, heat a shallow layer of oil and fry each sandwich on all sides till golden brown.
  6. While sandwiches are cooking, combine the maple syrup, peaches, remaining juice, butter and spices in a blender. Blend until smooth, then transfer to a small pot and bring to a simmer for 5 minutes.
  7. Drizzle over the top of the finished fried sandwiches and serve immediately.
