Portokalopita (Orange Cake)
A decadent yogurt cake speckled with bits of phyllo and flavored with oranges and finished with an orange and cinnamon simple syrup.
Ingredients
Orange Cinnamon Simple Syrup Ingredients:
¼ cup sugar
½ cup DOLE® Mandarin Oranges in 100% Juice, puréed
2 Tbsp water
⅛ tsp cinnamon
½ Tbsp orange zest
Orange Cake Ingredients:
4 eggs
½ cup vegetable oil
2 cups DOLE Mandarin Oranges drained, reserve juice
½ cup sugar
2 Tbsp baking powder
1 cup Greek yogurt, plain
2 Tbsp orange zest
1 tsp vanilla
Cooking spray
16 ounce phyllo dough, dried in oven at 200˚F until crispy, crumbled

Directions
Prepare Orange Cinnamon Simple Syrup:
- In a small pan over medium heat add sugar, puréed oranges, water, and cinnamon. Heat until sugar is dissolved.
- Remove from heat and add orange zest. Pour into small bowl and place in fridge.
Cake Directions:
- In a blender add eggs, mandarins, oil, sugar, baking powder, vanilla, yogurt, and zest. Blend on medium at least 2 minutes or until mixture is foamy.
- In a 9 x 12 cake pan that has been sprayed with nonstick spray, add the phyllo. Pour mixture over phyllo and gently mix to make sure phyllo is mixed in.
- Place in oven and cook for one hour, covering top after 30 minutes to avoid burning. Remove from oven after fully cooked and cool for 30 minutes.
- Ladle syrup over cake slowly, allowing liquid to soak into the cake between ladles.
- Place cake in refrigerator for at least an hour. Serve cold with mandarins as garnish.
