Directions

Prepare Orange Cinnamon Simple Syrup:

  1. In a small pan over medium heat add sugar, puréed oranges, water, and cinnamon. Heat until sugar is dissolved.
  2. Remove from heat and add orange zest. Pour into small bowl and place in fridge.

Cake Directions:

  1. In a blender add eggs, mandarins, oil, sugar, baking powder, vanilla, yogurt, and zest. Blend on medium at least 2 minutes or until mixture is foamy.
  2. In a 9 x 12 cake pan that has been sprayed with nonstick spray, add the phyllo. Pour mixture over phyllo and gently mix to make sure phyllo is mixed in.
  3. Place in oven and cook for one hour, covering top after 30 minutes to avoid burning. Remove from oven after fully cooked and cool for 30 minutes.
  4. Ladle syrup over cake slowly, allowing liquid to soak into the cake between ladles.
  5. Place cake in refrigerator for at least an hour. Serve cold with mandarins as garnish.
