Pineapple Coconut Gingembre

Freshly juiced ginger root mixed with a sweet blend of pineapple coconut juice, vanilla bean and lime juice, garnished with fresh mint leaves.

Pineapple Coconut Gingembre

4 cups DOLE Pineapple Coconut Mix

2 cups lime juice, fresh

1 cup sugar

1 cup fresh ginger, peeled and grated

1 vanilla bean, split in half lengthwise

2 ½ cups fresh mint leaves

ice, as needed

10 lemon wheels, sliced thin


  1. In a pot over medium to high heat, add both juices, sugar, ginger, and vanilla. Bring to a boil and reduce to a simmer.
  2. Mix until all the sugar is dissolved then remove from the heat and allow to cool and steep for roughly 1 hour.
  3. Serve ½ cup portion over ice with ¼ cup of mint leaves and lemon wheel.
