Boerewors Roll with Pineapple Chakalaka (South African Grilled Sausage)
A spiced beef sausage roll topped with a sweet and spicy pineapple relish.
Ingredients
10 spiced beef sausages, grilled
10 hot dog buns, toasted
Pineapple Chakalaka (sub-recipe)
Pineapple Chakalaka Ingredients
2 Tbsp olive oil
1 ½ cup onion, diced
½ cup green bell pepper, diced
½ cup red bell pepper, diced
2 tsp salt
2 Tbsp curry powder
½ tsp ginger, grated
1 tsp garlic, minced
¼ tsp smoked paprika
½ tsp cayenne pepper
3 sprigs fresh thyme
2 cups tomatoes, diced
2 Tbsp pineapple juice, reserved from can DOLE Pineapple Tidbits in 100% Juice
1 cup carrots, shredded
2 ½ cups red cabbage, shredded
2 Tbsp jalapenos, deseeded, diced
1 cup tomato sauce-based baked beans
2 cups DOLE Pineapple Tidbits, drained, reserve juice
Directions
- Heat olive oil in a large pot over medium heat. Add the onion and bell pepper, and cook down for 3 to 5 minutes, or until the onion is translucent.
- Stir in the curry powder, ginger, garlic, smoked paprika, cayenne pepper, and thyme, stir frequently for about 2 minutes until the spices are fragrant.
- Add the tomatoes and pineapple juice, and cook down for 2 minutes, until the tomatoes are tender.
- Add the carrots, red cabbage, and jalapenos and simmer for about 10 minutes, stirring occasionally.
- When the cabbage has wilted add baked beans and pineapple chunks and continue cooking for about 2-3 minutes. Remove from heat and hold warm.
- Place the sausages into the toasted buns and top each with ⅓ cup of pineapple chakalaka or your desired amount.
