Berlines
Ingredients
2 cups Flour, sifted
½ cups Milk, room temperature
2 tbsp Butter
1 Egg
1 ½ tsp instant yeast
1 tsp vanilla extract
2 ea. Cans Sweetened Condensed Milk
½ cups DOLE IQF Whole Raspberries, defrosted and diced
½ cups DOLE IQF Red Tart Cherries defrosted and diced
1 cups confectioners’ sugar for topping
Directions
- Place cans of milk in medium pot and cover with water at least at least 3 inches above cans.
- Bring to a simmer and cook for 2 hours. Making sure cans stay completely covered by water.
- Remove cans from water and allow to cool for 2 hours at room temperature. Place in fridge for additional 2 hours.
- Pour condensed milk into bowl and mix fruit in. Place in fridge for 30 minutes.
- Add yeast and vanilla to Milk and let sit for 10 minutes.
- In a mixing bowl beat butter for 1 minute. Add egg and beat for 1 minute.
- Add flour and milk mixture slowly to bowl allowing to incorporate.
- A dough will form.
- Place dough in a warm area covered for 1 hour.
- Put dough onto flat surface and roll out to ½ inch thick.
- Use cookie cutter to cut out 4-inch rounds. Cover and allow to rise for an additional hour.
- Heat fryer to 350 degrees. Cook in oil for 1 minute per side.
- Remove from heat and allow to cool on rack for 15 minutes.
- Cut small hole into side of doughnuts.
- Fill pastry bag with fruit mix. Pipe equal amount of filling into pastry.
- Sprinkle with Confectioners’ sugar and serve.
