Island Slinger
A tart and tangy beverage with a refreshing splash of coconut milk. Created by Chef Rebecca Gruwell.
Ingredients
ice, as needed
4 oz DOLE Pineapple Coconut Mix
1 oz lemongrass simple syrup
1 oz lime juice
2 oz coconut milk
4 oz club soda
Bruleed Lime, garnish
4 oz tequila or spiced rum (optional)
Directions
- Fill a shaker with ice and add Dole Pineapple Coconut Mix, lemongrass simple syrup, lime juice and coconut milk.
- Shake until chilled and well combined, about 30-45 seconds.
- Fill two high ball glasses with crushed ice. Split shaker contents between the two glasses. Top each with club soda and garnish with a bruleed lime.
- To make this beverage into a cocktail, float 2 oz of spiced rum or tequila on top.
