Baked Chicken Wings with Mango & Scotch Bonnet Glaze

This easy-to-make recipe brings the heat while being balanced out with a little bit of that mango tang.

Baked Chicken Wings with Mango & Scotch Bonnet Glaze

Ingredients

1 ¼ lbs chicken wings, drums and flats

1 ½ Tbsp paprika

1 Tbsp garlic powder

½ Tbsp onion powder

1 lemon, juiced

1 Tbsp vegetable oil

1 Tbsp kosher salt

½ Tbsp ground pepper

¼ cup rice vinegar

2 Tbsp honey

½ cup DOLE Chef-Ready Cuts Mango Cubes

½ scotch bonnet pepper, minced

1 tsp kosher salt

½ cup red bell pepper, large dice

Directions

  1. Preheat oven to 425 F.
  2. In a large mixing bowl combine chicken wings, paprika, garlic powder, onion powder, lemon juice, vegetable oil, salt and pepper. Mix thoroughly so all the seasoning is evenly distributed.
  3. Place wings on baking sheet and bake in oven for 35 minutes.
  4. In a small stock pot, combine remaining ingredients and bring to light boil for about 8 minutes.
  5. After 8 minutes, transfer mixture to a container and use an immersion blender to purée the glaze. Leave to cool at room temperature.
  6. Remove wings from oven and let rest for 5 minutes.
  7. Toss with glaze and enjoy!
