Piña Fizz

Piña Fizz

Ingredients

2 ounces aged white rum

1 ½ ounces DOLE Pineapple Juice

½ ounce falernum

½ ounce simple syrup or pineapple shrub (see recipe below)

2 ounces sparkling water (optional: sparkling wine)

Directions

  1. Combine all ingredients except sparkling water in a shaker with ice.
  2. Shake and strain into a highball or pilsner glass over ice.
  3. Top with sparkling water, garnish with mint and a lime wedge, then serve.

    PINEAPPLE SHRUB DIRECTIONS

    1. In a non-reactive container, combine 3 cups DOLE Frozen Pineapple Chunks, 1 cup grain sugar, 6 cinnamon sticks, and 1/4 teaspoon of cloves. Cover and allow to sit at room temp overnight.
    2. Remove solids and add 1/2 cup vinegar.
    3. Decant into a sterilized bottle or container. Mixture will keep refrigerated for up to 6 months.
