Piña Fizz
A laid-back, easy-to-make riff on the Gin Fizz—with an added splash of island flair.Created by Shannon Mustipher (Instagram: @shannonmustipher)
Ingredients
2 ounces aged white rum
1 ½ ounces DOLE Pineapple Juice
½ ounce falernum
½ ounce simple syrup or pineapple shrub (see recipe below)
2 ounces sparkling water (optional: sparkling wine)
Directions
- Combine all ingredients except sparkling water in a shaker with ice.
- Shake and strain into a highball or pilsner glass over ice.
- Top with sparkling water, garnish with mint and a lime wedge, then serve.
PINEAPPLE SHRUB DIRECTIONS
- In a non-reactive container, combine 3 cups DOLE Frozen Pineapple Chunks, 1 cup grain sugar, 6 cinnamon sticks, and 1/4 teaspoon of cloves. Cover and allow to sit at room temp overnight.
- Remove solids and add 1/2 cup vinegar.
- Decant into a sterilized bottle or container. Mixture will keep refrigerated for up to 6 months.
