California Cobb Salad Shaker
A salad that will leave you feeling full and energized, finished with a creamy Cajun Ranch dressing. K-12 Crediting: 1 oz. dairy, 1/4 cup fruit, 2 oz. grain, 2 oz. meat, 1/2 cup vegetable.

Dressing Ingredients
1 teaspoon cajun seasoning
¼ cup DOLE Chef-Ready Cuts Mango Cubes, pureed
½ cup plain lowfat yogurt
½ cup bottled ranch dressing
Salad Ingredients
2 cups cooked pearled barley
5 hard-boiled eggs chopped
1 cup chopped romaine lettuce
1 large diced cucumber
1 cup grape tomatoes cut in half
1 cup frozen DOLE Chef-Ready Cuts Diced Avocado
2 cups DOLE Chef-Ready Cuts Diced Apples thawed
½ pound cooked turkey bacon chopped
1 cup shredded Cheddar cheese

Directions
- DRESSING DIRECTIONS:
1. Place the dressing ingredients together in a bowl and whisk together until smooth and homogeneous. - SALAD DIRECTIONS:
1. Place 1/4 cup cooked barley in serving cup, layer with 1/8 cup (1 oz) each eggs, lettuce, cucumber, tomatoes, avocados, cheese and bacon. Top with 1/4 cup diced apples.
2. Drizzle 1 oz salad dressing over each portion before serving.
