Ful Mudammes with Honey Glazed Spiced Peaches
(2018 Pairings Recipe) A fruity twist to a traditional Middle Eastern dish.
Ingredients
2 pounds fava beans canned 34 cup liquid reserved
5 cloves roasted garlic
¾ cup extra virgin olive oil
½ cup plus ⅓ cup dukkah spice blend divided
1 tablespoon tahini
¼ cup honey
1 cup DOLE Chef-Ready Cuts Diced Peaches thawed
½ tablespoon fresh lemon juice
2 tablespoons chopped fresh cilantro
2 8" rounds pita bread toasted cut into triangles
Directions
- Cook fava beans, bean liquid, garlic, olive oil, 1/2 cup dukkah and tahini in a large mixing bowl, over medium heat. Cook mixture 7-8 minutes, stirring frequently, until beans are cooked and the mixture is fragrant.
- Transfer to a food processor and pulse until mixture is smooth. Hold warm for serving.
- Heat honey and peaches together in a small saute pan, over medium flame for 2-3 minutes, or until sticky and glossy looking.
- Stir in lemon juice and remaining 1/3 cup dukkah. Hold peaches hot for service.
- Scoop 1 cup of Ful Medammes into a serving vessel and top with 1/4 of glazed peaches. Garnish each serving with 1/2 tablespoon of chopped cilantro. Serve with toasted pita on the side.
