Mango Curry Quinoa Salad
(2018 Pairings) A tasty spiced quinoa salad with mango.
Ingredients
1-½ cups DOLE Chef-Ready Cuts Mango Cubes thawed
¾ cup mango puree
½ cup lowfat sour cream
2 tablespoons white balsamic vinegar
2 teaspoons curry powder
2 teaspoons garlic powder
½ teaspoon ground black pepper
1 quart water
2 cups white quinoa uncooked
¼ cup raisins
1 cup celery small diced
¾ cup red onion small diced
Directions
- Whisk together mango puree, sour cream, vinegar, curry powder, garlic powder, and black pepper in a small bowl. Cover and refrigerated until needed.
- Bring water to a rapid boil and add dry quinoa in a small saucepot. Reduce heat to low; cover and cook for 18 minutes, or until water is absorbed. Transfer to medium sized bowl or container and place in the refrigerator to cool.
- Toss together chilled quinoa, thawed mangos, raisins, celery and red onion in a large mixing bowl. Slowly add 3/4 cup of curry mango dressing and stir gently with a rubber spatula until fully incorporated.
