Mashed Cauliflower Bowl with Mango and Avocado
(2017 Pairings) Creamy mashed cauliflower that is seasoned with avocado and mango, a great side dish.
Ingredients
1 medium cauliflower cut into florets
⅓ cup grated parmesan cheese
1 tablespoon cream cheese softened
2 garlic cloves
½ teaspoon salt
1/8 teaspoon ground black pepper
3 tablespoons unsalted butter
1 cup DOLE Chef-Ready Cuts Mango Cubes
1 cup frozen DOLE Chef-Ready Cuts Diced Avocado
Directions
- Heat water to boiling in large pot, add florets cook 6 to 8 minutes or until tender. Drain.
- Place hot florets in food processor, add parmesan, cream cheese, garlic, salt, pepper, and butter. Cover; blend until almost smooth.
- Stir in mango and avocado.
