Avocado and Mango Mash Bowl
(2017 Pairings) Avocado mixed with mango, cilantro, Feta cheese and pineapple citrus vinaigrette.
Ingredients
2-½ cups Frozen DOLE Chef-Ready Cuts Diced Avocado
1-½ cups DOLE Chef-Ready Cuts Mango Cubes partially thawed
2 red endives leaves halved and thinly sliced
½ cup crumbled feta cheese
1-½ teaspoons salt
½ teaspoon ground black pepper
2 tablespoons DOLE Pineapple Juice
1 tablespoon lime juice
3 tablespoons extra virgin olive oil
2 tablespoons chopped fresh cilantro
Directions
- Mash avocados with fork, in medium bowl until smooth.
- Stir in mango cubes, endive, feta cheese, salt and pepper into mashed avocado.
- Stir together pineapple juice, lime juice and oil in small bowl. Stir into avocado mixture until blended. Garnish with cilantro. Serve with chips.
