
Ingredients
1-½ cups DOLE Chef-Ready Cuts Pineapple Cubes thawed and drained
3 eggs beaten
1 cup sour cream
½ cup prepared baking mix
3 tablespoons diced green chiles
½ teaspoon salt
1-½ cups shredded sharp cheddar cheese
6 slices bacon cooked and crumbled
2 tablespoons chopped fresh parsley
Directions
- Preheat oven to 400°F. Reserve 1/2 cup pineapple for garnish. Spray four (8 oz.) oven-proof bowls with cooking spray.
- Combine eggs, sour cream, baking mix, chiles and salt until blended. Stir in remaining pineapple and cheese. Pour into bowls. Top with crumbled bacon.
- Bake 40 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving. Garnish with parsley and reserved pineapple.
