Strawberry and Apple Tabbouleh
(2017 Pairings) A twist on a classic Middle Eastern salad.
Ingredients
4 bunches fresh Italian parsley
1 bunch fresh mint
¼ cup fine bulgur wheat
½ cup lemon juice divided
½ cup extra virgin olive oil divided
1 teaspoon salt
½ cup DOLE Chef-Ready Cuts Diced Apples partially thawed
½ cup DOLE Chef-Ready Cuts Diced Strawberries partially thawed
½ cup Persian cucumber diced
½ cup tomatoes small dice and drained
½ cup white onion minced
½ teaspoon Lebanese 7-Spice Blend recipe below
Directions
- Rinse all vegetables and dry very well. Trim parsley and mint and chop leaves finely. Set aside.
- Combine bulgur, 1/4 cup lemon juice, 1/4 cup olive oil and salt together in a bowl. Stir to mix. Let stand for 5-10 mins.
- Add parsley, mint, apples, strawberries, cucumber, tomatoes, and onion to bulgur. Season with Lebanese spice blend and remaining juice and oil. Toss to coat well. Serve immediately.
- Lebanese 7-Spice Blend: Combine equal parts of ground allspice, black pepper, ground cinnamon, ground cloves, ground nutmeg, fenugreek, and ground ginger.
