A flavorful shrimp and rice dish, seasoned with sazon.

1 lb medium or large raw shrimp peeled and deveined

2 tsp sazon seasoning

½ tsp ground black pepper

6 Tbsp butter divided

4 garlic cloves finely chopped

6 green onions thinly sliced keeping white and green separate

1 to 3 chipotle peppers in adobe sauce chopped

2 cups DOLE Chef-Ready Cuts Mango Cubes partially thawed

2 cups long grain rice cooked

  1. Season shrimp with Sazon and pepper.
  2. Melt two tablespoons butter, over medium heat, in large skillet. Add shrimp and saute until no longer translucent, about 2 to 3 minutes. Remove shrimp and reserve.
  3. Add 2 tablespoons butter, garlic, whites of green onions and chipotle peppers, stirring to blend.  Saute for 4 to 5 minutes.  Increase heat to medium-high and add remaining 2 tablespoons butter, half of the green onions, peppers, mango and rice. Stir and cook to heat rice.
  4. Next, fold in cooked shrimp and remove from heat. Serve in bowl and garnish with remaining green onions.
