Arroz con Camarones
A flavorful shrimp and rice dish, seasoned with sazon.
Ingredients
1 lb medium or large raw shrimp peeled and deveined
2 tsp sazon seasoning
½ tsp ground black pepper
6 Tbsp butter divided
4 garlic cloves finely chopped
6 green onions thinly sliced keeping white and green separate
1 to 3 chipotle peppers in adobe sauce chopped
2 cups DOLE Chef-Ready Cuts Mango Cubes partially thawed
2 cups long grain rice cooked
Directions
- Season shrimp with Sazon and pepper.
- Melt two tablespoons butter, over medium heat, in large skillet. Add shrimp and saute until no longer translucent, about 2 to 3 minutes. Remove shrimp and reserve.
- Add 2 tablespoons butter, garlic, whites of green onions and chipotle peppers, stirring to blend. Saute for 4 to 5 minutes. Increase heat to medium-high and add remaining 2 tablespoons butter, half of the green onions, peppers, mango and rice. Stir and cook to heat rice.
- Next, fold in cooked shrimp and remove from heat. Serve in bowl and garnish with remaining green onions.
