Mango Coconut Kale Salad
A healthful and tasty kale salad sweetened with mango.
Ingredients
4 cups kale finely sliced
1-½ tbsp. lemon juice
1 tbsp. olive oil
¼ tsp salt
2 cups DOLE Chef-Ready Cuts Mango Cubes
¼ cup unsweetened coconut flakes
¼ cup cashews toasted and chopped
salt and ground black pepper to taste
1 tbsp honey
Directions
- Combine kale, lemon juice, olive oil and salt in large bowl. Massage kale with hands until glossy green and soft.
- Stir in mango, coconut and cashews to kale; stir. Season with salt and pepper. Stir in honey.
Tip: To make a main dish salad, add cooked bay shrimp.
